Gingerbread Loaf


So when your boyfriend comes to you, with puppy dog eyes and a sweet husky voice, and begs you to make him a bread loaf then how can you say no? Well it also wasn't such an easy task. You see, Daniel is currently on an elimination diet for a short period of time. This diet basically means you have to cut a lot of stuff from your diet such as: gluten, wheat, certain meats, dairy, refined sugar, sulphur etc. Because he has been on such a boring diet for the last while, I decided to treat him not just to any loaf but to a GINGERBREAD loaf, because I know how much he enjoyed my Gingerbread cookies that I made during Christmas.

As it was baking in the oven, the smell was overfilling the room and it smelt heavenly!! It came out perfectly and it was super super soft. It almost felt like you were eating a dessert when you were taking a bite but I promise it tastes good too when you eat it for breakfast, lunch or dinner ;)

So Dan came home as it was busy cooling down and I could see he started drooling the moment he saw it! I cut him a nice big piece, put it on a plate and handed it to him. I started talking myself up (and my baking skills) by saying how I managed to make a delicious loaf for him to eat and I started listing the ingredients in the loaf so he could be impressed. And then.... I told him I added eggs... and he dropped the piece from his hand and started grimacing! I completely forgot that he also wasn't allowed eggs!! I felt so bad that I baked a whole loaf just for him and then he couldn't even try it haha but it completely slipped my mind. So I took it over to his parents place for our regular Sunday night dinner and we devoured it for dessert, topped with peanut butter and some even had ice cream with it.

Now please, when you decide to make this - whether it is for yourself or your boyfriend/girlfriend, friends or family - PLEASE make sure that that person can actually enjoy it haha. Poor Dan. He will never let me live this one down :)

Gingerbread Loaf

Ingredients

2 cups gluten-free flour

1 tsp all-spice

2 tsp ground ginger

2 tsp cinnamon

1 tsp baking soda

1 tsp baking powder

2 tsp salt

2 eggs

1/2 cup coconut oil

1/4 cup blackstrap molasses

1/3 cup xylitol

3 Tbsp honey

1/3 cup almond milk

Method

1. Preheat oven 150'C and line your baking tin.

2. Combine the flour, spices, baking soda, baking powder and salt into a bowl and mix together.

3. In a separate bowl, melt and mix the coconut oil, blackstrap molasses, xylitol and honey.

4. Add the wet mixture to the dry mixture and mix together.

5. Add the eggs and milk and mix together.

6. Once everything is combined, pour the mixture into your baking tin.

7. Bake for 45-60 minutes (depending on your oven). Make sure it is fully cooked by sticking a toothpick into the centre.

8. Allow it to cool.

9. Once cooled, slice and enjoy!
