So I had the last bit of peanut butter left in the jar (organic/unsalted/unroasted type of peanut butter) and I felt like experimenting and whipping up something incredibly different (well different for me haha). I usually get into a routine with my baking and tend to make one thing for a while until I get inspired to make something else. BUT luckily this time I stepped outside my baking comfort zone and decided to make ..... raw Peanut Butter Cups *(cue "yum" factor now)!!
These are so delicious! And I am not just saying that! If you have friends coming over, want to bake for a dinner party or simply feel like treating yourself then please try these. The best part about them is you get to decide how rich/sweet you want them to be. For me, I love dark chocolate so I coated them with 85% dark chocolate. A colleague of mine loves milky chocolate so by all means choose what your taste buds prefer.
PS. DO NOT leave out the salt. It gives the best salty/sweetness to these bad boys that just takes this recipe from yum to YUM!

Peanut Butter Cups
Makes 9 cups
Ingredients
2 cups gluten-free oats
135g medjool dates
1/4 cup coconut oil
Pinch of Himalayan salt
1 tsp cinnamon
100g chocolate of choice (I used 85% dark chocolate)
+- 1/3 cup unsalted/unroasted peanut butter
Method
1. Add the oats to your blender and process until oats are in smaller pieces (not a flour consistency)
2. Add the dates (make sure they are pitted), coconut oil and salt into the blender and process until it becomes a sticky dough.
3. Place the dough mixture into the fridge for 10 minutes.
4. Spay the muffin tins with non-stick and start placing the dough mixture into the muffin tins. You want to try create a small "hole" or well in the centre.
5. Place a small dollop of peanut butter into the centre of the cups.
6. Melt the chocolate and cover it on top of the cup mixture. Sprinkle some salt on top of the chocolate.
7. Place the cups into the fridge for 30 mins or until set.
8. To remove them from the muffin trays - I turned the muffin tray upside down and they all popped out but if yours are having difficulty then use a knife to wedge them out.
9. Enjoy!
*It is best to keep them in the fridge as the chocolate can melt
