My Coconut Date Ball recipe is AMA-Z-ING! Don't believe me? Ask Daniel - he enjoys eating them all in 1 day haha (I sometimes have to hide them to try make them last longer).
They are perfect to fit into your lunch box, are not too sweet and are yet deliciously satisfying. I love changing them up and coating them differently - today its coconut, tomorrow its cocoa, and the next day its crushed nuts. The choices are endless!
All you need are a few ingredients to make your very own batch of yummy date balls!

Coconut Date Balls
Ingredients
1.5 Tbsp nut butter of choice
1.5 cup medjool dates (soaked)
1.5 cup coconut flour
1/2 cup desiccated coconut
1 tsp cinnamon
1.5 Tbsp chia seeds
1 tsp Himalayan salt
Coating:
Desiccated coconut
Cocoa powder
Crushed nuts
Anything your heart desires!
Method:
Place all the ingredients into a processor and add a Tbsp of water to help it blend properly (add enough water until it is able to form into a ball).
Remove it from the processor and roll 12 balls (more or less depending on the size of your ball).
Coat it in cocoa powder and desiccated coconut (or anything else your heart desires) and place it in the fridge for up to 1 hour.
Eat and enjoy!
